Secrets of Chives

Most people have, by now, tasted the classic pairing of sour cream and chives. However, there is a lot more to this versatile herb than meets the eye. Chives are actually a member of the onion family, which in turn are types of lily. They are grown mainly in California, and are used extensively, especially in French cooking. They are a part of the classic French fines herb blend, and are prized for their mild onion and garlic flavor. Using chives at home is simple – take a bunch of the thin stalks in one hand, and cut with a pair of scissors into the dish of your choice. You could try using them in the classic sour cream dip, in cheese or egg dishes, or as a tangy garnish on a variety of foods. So, if you want a great all round herb to add to your culin ary repertoire, why not cultivate a window box full of chives, and keep them on hand all the time?
