Secrets of Perfect Lamb Shanks

If you are looking for something special to serve at your next dinner party, then lamb shanks may just be the answer. There are a few secrets to getting them exactly right however. First, buy your lank shanks from a good butcher. Look for shanks with a little fat, but not too much, and with deep red or pink flesh. To cook your lamb shanks, rub with salt and pepper, and then brown them all over in a pan with a little butter or oil. Once browned, place in a casserole, and add liquid to about halfway up the shank– this could be stock, red wine, or a mixture of the two. Bake the shanks in their liquid for two or three hours, turning frequently, until super tender. To finish off your lank shanks, drain off the liquid (use it to mak e a gravy or sauce) and place the shanks under the grill to brown and crisp.
