Secrets of Cinnamon

Probably the world's best-known spice, and it is best loved, cinnamon is one of those scents that has the power to transport you back in time. The spice itself is actually rolled bark from the cassia tree, and comes from Indonesia and Vietnam. Cinnamon can be bought either in rolled stick form, or ground, and it is very popular in baking. Of course, it is probably the best friend of apples, in pies, fritters or other forms, and it also works well with other fruit. It has even made its way into cereals over the years. It does, however, also work well in savory dishes, and can be added to curries, or to meat or game dishes, to add a hint of sweet spice. You could even try mixing a little cinnamon into your next meringue mixture to create a spicy treat.
