If you like it hot, then cayenne pepper is definitely a spice you should have in your spice rack. Made from dried and crushed chili peppers from India, this fiery red spice adds instant heat to any dish, whether Asian, Indian, Italian, or Mexican. The trick to using cayenne pepper is to remember that a little goes a long way – and that it has virtually no scent, so don't rely on your nose to tell you what's enough! little cayenne pepper will add heat to salsa, guacamole, tacos, and other Mexican dishes. It also makes a fiery addition to barbeque sauces, and a little added to cheese sauces adds a distinct zip, or to scrambled eggs and omelets. One word of caution though – because this really is a hot spice, exercise caution, and re member – less is more!
