How to Make Smoked Salmon Spread

Although expensive, this cocktail snack is very quick and easy to make, and is so delicious, there will definitely be no leftovers. To make the spread, place 120 to 160g smoked salmon slices or off-cuts, 250g smooth, low-fat cottage cheese, 25ml fresh lemon juice, a pinch of salt and sugar, 45ml very soft butter and a few drops of Tabasco sauce, in a processor fitted with the grinding blade and process until smooth. Turn into a suitable container, and refrigerate for a few hours to chill. This spread can be put thickly onto toast fingers or toast circles, which can be cut with a small biscuit cutter, and crackers. Grind pepper over, then arrange on an attractive plate. Each snack can be garnished with a caper or two, and the plate with dill or nastur tium leaves.
