How to Make Cauliflower Soup

If you're like most people, you don't think about cauliflower as much other than a side dish, topped with white sauce and gratinéed. However, this humble vegetable can be the star of the show too. To make an easy and delicious cauliflower soup, simply break the florets from a whole cauliflower, and place in a sauce pan. Just cover with chicken or vegetable stock, and then simmer gently until the cauliflower is tender. Remove the lid, and reduce the liquid. Once the liquid is reduced, remove the saucepan from the heat, and puree the cauliflower with the stock using a hand blender. Stir in a carton of single cream, and adjust seasonings to taste. This pale soup is delicious served with cheesy croutons, or with fresh, crusty bread.
