Allspice is the dried seed of a particular type of pimento, which comes from Jamaica, Honduras, and Guatemala, and it is a popular spice, that is worth having in your kitchen. It is a popular ingredient in Jamaican jerk seasonings, and if you like a taste of the Caribbean, it is a great addition to your spice rack. Use allspice to flavor teas, in cakes, cookies or in pies. It also works well in pickles, curries, soups, and stews, so it is a great spice to experiment with. It's not, as some believe, a mixture of all spices, but a unique, standalone spice, and like all other spices, it should be stored in a cool, dark place to preserve flavor. If you can find them whole, allspice berries make an interesting addition to meat dishes, used as you would whole p epper corns.
