How to Use Romanesco

Up until fairly recently, I had no idea what romanesco is. This bright green cousin of old favorites cauliflower and broccoli looks quite different – with its pointed florets and bright green color, but it tastes great, so don't let that put you off! To use, you could go the conventional route, topping boiled or steamed romanesco with white sauce and cheese and grilling it, or you could add the romanesco to a stir-fry, or even a stew. Another great idea is to lightly steam it and then sauté the florets in melted butter and garlic, which makes a great side dish. In fact, any use you could come up with for broccoli and cauliflower will suit the interestingly shaped romanesco too, so look out for it at your supermarket or green groce r.
