Why You Should Serve Smoked Salmon, Kiwi Fruit and Sour Cream

This starter, with its beautiful colors and superb combination, is one of the easiest ways to start off a fine meal, and serves 6. Make the dressing first, so that all the flavours can blend before serving. In a bowl combine 250ml cultured sour cream, 1ml each of salt and sugar, 15ml each of finely chopped parsley, chives, and dill, and a knife-tip or finely grated lemon rind. Stir well to mix, spoon into a glass jar and refrigerate, covered, for about 2 hours. Arrange the salmon on one half of each plate, slice half a kiwi fruit onto the other half of the plate, and then pour some of the dressing down the center of the plate, between the salmon and the kiwi fruit.
