
This sauce is extremely useful and delicious, and is quick and easy to make in a food processor or blender. Put one egg, ½ teaspoon salt, ½ teaspoon sugar, 1 teaspoon Dijon mustard, and 2 tablespoons wine vinegar into a blender or food processor. Turn the blender on, and pour in the oil in a thin stream until the mayonnaise is as thick as you want it to be. Your mayonnaise can be stored in a covered container in the refrigerator for up to 2 to 3 weeks. For a garlic flavour, add one or two cloves of garlic before adding the oil, and leave to stand for about an hour to soften the flavor. You can also have a herb-flavored mayonnaise, by adding ¼ cup of roughly chopped parsley, and 1 to 2 teaspoons each of basil, or eganum, thyme, or dill, before adding the oil.
