How to Cook Shredded Beetroot

Contrary to what many people believe, beetroot does not have to be boiled whole before using it in the many other ways. It also cooks faster if shredded before being boiled. Thinly peel and shred about 300 to 400g raw beetroot. Cook 1 chopped clove garlic in 2 teaspoons butter, without browning. Then, add the shredded beetroot, ¼ cup of water, and 1 tablespoon of orange or lemon juice, cover, and cook over moderate heat for about 5 to 15 minutes, until the beetroot is cooked. Try to have al the liquid evaporated by the time that the beetroot is tender. Season with salt and pepper to taste, and if the taste is too bland, a little sugar. If you wish to, some finely chopped fresh herbs may also be added. This beetroot tastes best w hen served hot.
