The Secrets of Making your Own Sun-dried Tomatoes

Sun-dried tomatoes look and taste great, and are very versatile. They can be kept for a long time, so that they are always on hand when needed, and if you make your own, as soon as your stocks are running low, you can simply make more. Pre-heat your oven to between 60 and 80 degrees C. Slice as many tomatoes as you want into 1cm thick slice, and lay in an ovenproof pan. Spray or brush the slices with olive oil, and season with salt and pepper. Herbs such as basil and oregano can also be used, and will add to the flavour. Place the pan in the oven, and leave the tomatoes to dry. Once dry, store in a clean jar, cover them with olive oil, and seal. Your sun-dried tomatoes will add brilliant color and taste to salads.
