Secrets of Making Your Own Ravioli

If you love fresh pasta, and more importantly filled pasta, then making your own ravioli is a great way to get the freshest possible, and save money. It's actually a lot easier to do it than you think. To make the pasta itself, all you need to do is combine flour and eggs – one cup to one egg, to get the desired quantity. You want the dough to be firm, but not too hard to work with, so if necessary, add a little cold water. Once that's done, you will need to roll the pasta out into thin sheets, either using a pasta maker, or if you're feeling brave, with a rolling pin. Making the actual ravioli is simply a matter of cutting the sheets into rectangles, and filling with your choice of stuffing – meat is traditional, but y ou could opt for chicken, seafood, or vegetarian versions like butternut. Simply place a teaspoon on the pasta, on one end of the rectangle, fold over, and seal, by pressing a fork into the edges of the pasta.
